Equipment

  • muddler or narrow wooden spoon

Ingredients

  • 4 oz spiced rum
  • 1 medium apple red
  • 6 oz apple cider
  • 2 oz sparkling water
  • 4 mint springs
  • 1/2 teaspoon nutmeg freshly-grated (optional)
  • ice

Instructions

  • Fill a glass of choice three-quarters full of ice. (To create a Cuban-style mojito, first fill the bottom of the glass with mint and muddle the leaves with a wooden spoon like a pestle to release more of the aromatic mint flavour. Then, add ice and follow the rest of the recipe.)
  • Cut the apple in half and one piece into 8 slices. Divide apple slices between the glasses. Reserve the remaining apple for garnish.
  • Pour the spiced rum over the ice and apple slices. Shake the jug of apple cider to distribute any sediment and pour into each glass.
  • Top with sparkling water.
  • Garnish with sprigs of mint, slices of fresh apple and freshly-grated nutmeg.
  • Stir and serve immediately.

Notes

  • For carefree entertaining, mix the spiced rum and apple cider in advance and store in a container within the refrigerator until ready to serve.
  • If you cut the apples slices in advance, sprinkle them with lemon juice and place them in a plastic bag or cover with plastic wrap to prevent discolouration.
  • Always store fresh apple cider in the refrigerator.
  • For a non-alcoholic beverage,  just skip the spiced rum and add extra freshly-grated nutmeg. Your apple cider mojito mocktail will deliver all the big flavours of the boozy version without the buzz.
